What is sisig?

Sisig is one of the best-loved dishes in Filipino cooking: chopped, seasoned meat served on a sizzling hot plate, sharp with calamansi and chilli. It comes from Pampanga, the province north of Manila often called the culinary capital of the Philippines, and Angeles City in particular is famous for it. Filipinos cook it many ways today — with chicken, tuna, squid and even tofu. What never changes is the sizzle, the tang and the crispy edges.

How to eat sisig

Mix everything together while the plate is still hot so the chicken keeps cooking and crisping. Eat it with steamed rice, or simply pick at it with friends: sisig is classic pulutan, the Filipino word for food that's made for sharing and chatting over. A favourite barkada order is sisig with Chicken BBQ on Stick and Lumpiang Shanghai, then a cold Halo-Halo to finish.
