What is Iniwow sa Bilao?
Iniwow sa Bilao is the signature dish at Fiestahan and our number-one best seller. It's a grand sharing platter: a woven bilao — the round, flat bamboo tray found in every Filipino home — piled high with grilled and fried favourites for the whole table. Our Arabic menu sums it up as a mixed grill of fish, beef and chicken, and that's the heart of it: something for everyone, served in the middle of the table so everybody can reach in.
Why serve it on a bilao?
In the Philippines the bilao does a bit of everything. It's used to winnow rice and dry fish, and above all to carry food to a party. Pancit, rice cakes and party trays arrive on a bilao at birthdays, fiestas and family reunions. Serving food this way says one thing clearly: this is for sharing. That's exactly the spirit of Iniwow sa Bilao — no individual plates to guard, just one generous spread and plenty of conversation around it.
Who is it for?
The platter is made for groups — family lunches, barkada nights, birthdays and office get-togethers. If you're feeding a bigger crowd, the Barkada Feast serves eight, and the menu also has a Seafood Bilao, Minaluto (a seafood feast platter over rice) and pancit bilao platters with bihon, canton or both. Make it a full fiesta
Build the table around the bilao. Add a bowl of Bacolod Cansi or Batangas Bulalo to share, a plate of Lumpiang Shanghai and a sizzling Fiesta Sisig, then finish with Halo-Halo. On Thursday, Friday and Saturday a live band plays from about 7:30 PM — the perfect time to bring the barkada. Band nights fill up, so book ahead.
